Let me tell you, the first fancy birthday cake I attempted was more of a sticky crumby train wreck than the perfect cake I had envisioned. I sure wish I had her around back then so I would have iced a simple cake and made it amazing with her beautiful fondant! So to save you from creating a train wreck yourself, Stacy is here to the rescue with some amazing beginner cake decorating tips to get you started. Here's Stacy!
I have always had a love for baking, and crafting. Since a young age I have always tried to recreate and make all sorts of things I have had some “fails” in the past as well. I now have 2 son’s 6 and 4, my oldest sons first birthday party is where I really started to play around with cake decorating. The simple monkey cake I made that year grew into a huge passion for me.
If you are eager to get started on your own masterpiece here is a few tips I wish I had known my first time around.
Store bought icing not only doesn’t taste as nice but it will not hold its shape.
Level and Stack
Cakes need at lease two layers to give it a professional look and some height. Trim off the top layer on the cake that has domed while baking.
Cool and Crumb Coat
Always allow your cakes to cool before you begin decorating. It is best to put a thin layer of buttercream around your cake then cool again. This locks in all the tiny crumbs of cake so they don’t end up in your top layer. This is called a crumb coat or dirty ice.
The list of tools that you could collect if this because a serious hobby for you goes on and on but if you are just getting started are want to impress your family every once and awhile with your amazing caking skills here is what I woulds suggest pick up.
- offset spatula
- piping tips these are my most used - Wilton 1A and Wilton 1M
- piping bags
- cake plate
- gel food colouring
Planning out your cake is always a good idea and will allow you time to think about how to make the cake extra special. Think about the person you are baking for its all in the details. I hope that if you have ever had the itch to cake decorate that you jump in. Its a messy but rewarding hobby :)
